The Soil: Our terroir consists of loamy – chalky marls limited in
depth by sandstone rock, situated in the most Mediterranean part of the Cabardès but with a climate moderated by Atlantic influence. Son of the Languedoc but cousin of the South
West.
The Grapes: The picking, spread over more than a month is mostly done
by machine, at the moment. The evolution of the maturities of the different grape varieties is respected. The grapes are destemmed and their own yeasts assure the fermentation in stainless steel
or concrete tanks. Soft pneumatic pressing.
Viognier 2011: Aromatic and spicy, fresh and vibrant.
Created in 2005 as well as the Petit Verdot, the Viognier is just like it’s blond sister, although a little capricious, we’re not going to reproach
here it’s presence of personality. Neither it’s qualities, which will certainly improve in the coming years.
Pays d’Oc IGP, 2800 bottles. Cases of 12 bottles bourgogne authentique in horizontal position.

The Grapes: The picking, spread over more than a month is mostly done by machine,
at the moment. The evolution of the maturities of the different grape varieties is respected. The grapes are destemmed and their own yeasts assure the fermentation in stainless steel or concrete
tanks. There is a limited addition of sulphur and a smooth aeration in order to extract only the very best. A more or less long « infusion » together with many tasting will determine
the right moment to press (pneumatic.)
Petit Verdot 2011: Peppery and floral, refined and
complex.
Planted in 2005 with 4600 stocks/ha on the Majelus terroir, a pine tree next to it, it’s the smallest plot of the domain. For now, as we just met,
the petit verdot seems soft and generous, giving itself completely, easily just on demand. No frenetically racking, treading or other repeated manipulations. It’s a fascinating varietal.
